It is the primary responsibility of the Executive Steward to ensure all phases of kitchen cleaning to attain safe and sanitary conditions for the property. All duties are to be performed in accordance with departmental and property policies, practices, and procedures.

Specific Job Functions:
• Oversee the breakdown, feed, catches, and sorts of all dishes and flatware as it is brought to the dish area
• Ensure wash, sort and store pots in their proper location on shelves
• Oversee wall washing, ceilings, baseboards, floor drains, hand sinks, tables and cutting boards
• Ensure floors are mopped and swept daily
• Ensure the transport of garbage from kitchen areas to trash room is completed
• Oversee the polishing of silver, glass and brass in areas as needed
• Delegate tasks to department and ensure job requirements are completed correctly and in a timely manner
• Work closely with the Executive Chef and Director of Food and Beverage
• Work closely with the Chef’s department and all room managers in order to assure quick and efficient operations of each restaurant outlet
• Perform walk through inspections of kitchen areas and complete noted checklists
• Communicate job assignments to stewarding employees in English and Spanish
• Maintain employee records, attendance tracking sheets, checklist and daily reports
• Apply proper disciplinary action to line employees and complete required documentation
• Order chemicals and maintain necessary inventory and supplies
• Maintain inventory and record of hollowware, silverware, glassware and other equipment
• Conduct health inspections with the health department
• Train assistant executive stewards, supervisor and employees on their functions
• Conduct OSHA inspections with Occupational Health and Safety Department
• Conduct inventory of food and beverage outlets
• Ensure operations follow Health, Safety and Occupational Safety and Health Administration regulations
• Conduct chemical, OSHA and Health department training for employees
• Maintain a working knowledge of Banquet Set-up and banquet function skills
• Perform all duties as deemed necessary for the success of the department

QUALIFICATIONS
• At least three years supervisory experience in a high-volume resort required
• A working knowledge of kitchens, dish machines, silver-plated equipment care and polishing, and chemical awareness
• Strong working knowledge of OSHA and safety regulations
• Basic working knowledge of Microsoft Office and other related computer programs a must
• Communicate effectively in English both verbally and written forms
• At least three or more years stewarding experience required
• Professional appearance and demeanor a must
