Job Description

 

The Hartford Marriott is looking for an experienced Sous Chef.

Outlet Kitchen Sous Chef

Purpose for the Position:

 

Order, Prepare and cook foods in accordance with the standards of quality, safety, taste and presentation as established by the Executive Chef while demonstrating complete knowledge of all Outlet kitchen areas. Manage outlet culinary and outlet stewarding team members in a proficient and professional manner.

 

 

Responsibilities:

  • Understand POS tickets
  • Hold Daily Line up Meetings
  • Work closely with Restaurant Manager and assistants Managers in a professional manner
  • Schedule culinary team members weekly to cover Outlet kitchen needs
  • Must complete payroll according to scheduling
  • Must discipline employees in a fair and concise manner maintain hotel procedures
  • Must order proper products and proper product quantities to reflect outlet business needs
  • Must be fully aware of and in compliance with Kitchen “Appearance & Grooming Standards”
  • Must attend “Great Food Safe Food” or be “ServSafe” certified
  • Must provide professional and courteous guest service at all times
  • Ability to assist the Executive Chef in determining product need and assist in maintaining professional kitchen cleanliness
  • Cooks and prepares foods according to standardized recipes and methods, checking all food for taste, temperature, and eye appeal
  • Must show proficiency in all manner of proper/safe food receiving, handling, preparation, cooking, and storage pertaining to scheduled meal periods
  • Rotates all food in assigned refrigeration and storage spaces and places all food in clean containers, properly labeled and dated
  • Accommodates all guest requests for special food items
  • Ensure that assigned area is kept clean, properly stocked, and professionally maintained
  • Completes projects as determined by the Executive Chef

 

 

Requirements – for this position, you must be able to:

  • Skillfully handle tools and machinery relative to your work
  • Read and understand instructions, recipes, safety rules, etc.
  • Apply mathematic knowledge to all units of measurement to accurately increase or decrease food production, recipes, etc. as necessary
  • Measure, cut, or otherwise work on materials or objects with great precision
  • Envision what the finished product will look like
  • Accept responsibility for the accuracy and quality of the work as it is turned out
  • Lift up to a maximum of 50 pounds with frequent lifting and/or carrying of items weighing up to 25 pounds
  • Tolerate temperatures sufficiently high to cause marked bodily reactions
